The Dominican Republic doesn't get nearly enough credit in the specialty coffee world, and the Ramirez Estate is exactly why that needs to change.
We roast this to a medium and find it delivers a robust, fuller bodied, lower acidity cup that's rich and smooth with nutty, chocolate, earthy, and spice tones. There's a jazzy citric note that adds a touch of sweetness, and on the darker end some pleasant roasty and smoky notes emerge — bold without being harsh.
It's the coffee equivalent of a sloth who's also somehow very productive. Reliable, versatile, and deeply satisfying.
