Ethiopian Yirgacheffe Org. Washed Gr. 1 – Hafursa Cooperative
Crisp, clean, and exotic. Yirgacheffe at its most refined.
From the Hafursa Cooperative in the Yirgacheffe region, this organically grown washed Grade 1 is one of the most aromatic and complex cups in our lineup. Best at light to medium roast levels where the exotic character really shines.
We roast this at City and find it delivers great aromatics filled with jasmine spice and soft fruit. The cup is very crisp and clean with new crop acidity and floral notes — mostly citric but with a little soft fruit tone woven in. The balance comes from a semi-tea-like chocolate spice factor — think chocolate spice with a hint of black tea in the background.
At our roast level the cup builds a good body with more of the chocolate spice note coming forward, reducing the acidity slightly so even more of the exotic tones can be found. The cool spice and lighter note balance is what makes this bean special — we roast to preserve exactly that.
Interestingly, in Ethiopia they traditionally serve these beans at a much darker roast — smoky and chocolaty. We prefer to honor the lighter notes, but it's a testament to how versatile this bean truly is.
