A wonderful example of what heirloom Ethiopian strains can do — a taste like no other. Grown and washed in the Banko Gotiti area of Yirgacheffe, this organically grown Grade 1 is one of the most delicate and complex cups we roast.
We roast this just a shade between light and medium — our sweet spot where the citric tones mellow out and the sweet floral character pops, building a bit more sweet caramel and chocolate with a hint of tea-like spice in the aftertaste. Crisp but not overly acidic. The aromatics on these beans are fantastic — wonderful floral depth that carries straight into the cup.
At our roast level you get hints of citrus and soft fruit commingling with floral, caramel, chocolate, and tea-like spice — a very delicate and sweet cup that showcases everything special about this origin.
It's the most refined sloth in the room — quietly extraordinary.
